CABERNET FRANC 'CHAOS' DU VIN AUX LIENS 2019 DESCRIPTION

The Cabernet Franc 'Chaos' is a full and pure expression created in the Loire by the Du Vin aux Liens winery in synergy with the La Table Rouge winery, according to a sustainable winegrowing approach. The project was officially born in 2019 from the mind of Vanessa Letort, who, after a few years of meetings and experience in the wine sector, decided to create a space where producers from Alsace, Loire and other areas can offer their wines to lovers of artisanal labels. Vanessa makes her own cider and wine together with her husband, Farid. The expression 'du vin aux liens', which gives the winery its name, translates into 'from wine to links', while artist Ariel Cortez illustrated the beautiful Cabernet Franc 'Chaos' label.

Du Vin aux Liens 'Chaos' Cabernet Franc is made solely from grapes of the blackberry variety of the same name, cultivated according to organic farming principles, with the soil being worked by a horse. The vines, which are 30 years old, rest on soils composed of siliceous clay and blue clay within the commune of Nazelles Négron. After harvesting, the grapes are destemmed and mashed for spontaneous alcoholic fermentation associated with approximately 15 days of semi-carbonic maceration. Once the fermentation process is complete, the mass is placed to age on the fine lees in small oak barrels for 10 months before being bottled without undergoing any filtration or addition of sulphites.

The 'Chaos' Du Vin aux Liens Cabernet Franc is an intense ruby red colour. The bouquet is broad and rich, described by vivid perceptions of red fruits and undergrowth that meet hints of fine woods and spices. Full and decisive on the palate, with a great balance between softness, juicy freshness and ripe tannins that anticipate the fruity persistence.
