Chardonnay 'Canto X' Ottin 2021

Ottin's 'Canto X' is a fresh and saline pure Chardonnay that is aged 12 months in small tonneaux. The name of this wine expresses the fact that it is the tenth wine produced by the winery and also recalls Dante's Canto of the same name, which tells of 'la pena de li eretici', or 'the punishment of heretics', those who challenged the power of the Church. Notes of tropical fruit, aromas of bergamot and buttery hints define the character of 'Canto X' and make it perfect with savoury fish dishes

CHARDONNAY 'CANTO X' OTTIN 2021 DESCRIPTION

The Chardonnay Vallée d'Aoste 'Canto X' represents one of the latest innovations from Ottin, a white wine from Valle d'Aosta that stands out for its seductive mineral and tropical fruit aromas, produced for the first time with the 2021 vintage. This label, a direct result of Elio and Nicolas Ottin's passion for Chardonnay, owes its name to the particular history behind the vineyard from which the grapes come. In ancient times, the vineyard was purchased by a local family at a very advantageous price because it was part of the ecclesiastical property confiscated by the Kingdom of Italy from the Church, a situation that led to the excommunication of the family. To remember this story, it was chosen to evoke Canto X of Dante's Inferno, which narrates the "penalty of the heretics". Additionally, this is also the tenth wine produced by the winery.

Ottin 'Canto X' Chardonnay is an expression of the same grape variety grown on sandy soils of morainic origin, located at an altitude of 650-700 meters with southern exposure. Harvesting is done by hand in crates and is followed by gentle whole-cluster pressing and then 10 days of alcoholic fermentation in French oak tonneaux of 300 liters. In the same wine containers, complete malolactic fermentation and maturation for about a year on fine lees take place.

The 'Canto X' Chardonnay Vallée d'Aoste from Ottin is straw yellow with golden reflections. The aroma offers inviting notes of ripe mango, passion fruit, bergamot, and thyme, as well as deep hints of butter, white pepper, and flint stone. The palate is complex, fresh, and saline, characterized by a soft body and a finish of excellent persistence on the fruity and woody sensations of the nose.
