SAUVIGNON 'AT' AQUILA DEL TORRE 2021 DESCRIPTION

The white wine Sauvignon "AT" likes to present itself as a standard bearer of the territory in which it was born, the renowned and prestigious denomination of Colli Orientali del Friuli. The varietal here tries to express itself to its full potential, revealing a fine and fresh soul both on the nose and on the palate thanks also to the choice made by the Aquila del Torre winery to enhance its most authentic profile thanks to a vinification and aging carried out only in steel. A fresh bottle with an accomplished flavor profile, perfect for any occasion.

"AT" is a pure Sauvignon that comes from vines cultivated with the guyot system whose age is around 15 years, located at an altitude above sea level between 175 and 350 meters above sea level. We are located within terraces overlooking the valley, warmed by the sun and characterized by a subsoil composed of marl and clay. The must obtained from pressing the grapes ferments spontaneously in steel containers, thanks to the presence of indigenous yeasts. Maturation then takes place always in steel for a duration of nine months, after which bottling operations begin.

Sauvignon "AT" reveals itself on visual examination with a typical straw color, crossed by slight greenish nuances. Properly varietal is the nose, which is wrapped in gentle and refined scents, where white-fleshed fruit mixes with exotic fruit, hinting at more vegetal and mineral touches. In the mouth it is full-bodied, elegant, characterized by a bright and lively mouthfeel, from which a refreshing flavor emerges. A label with a strong gastronomic bent, and suggested to be paired with fish soups or vegetable-based risottos.
