"Sixty" of the Ferlat winery is an elegant and enveloping Cabernet Franc with an elegant and structured character. Once destemmed, the grapes are crushed in cement tanks where they macerate for 20 days and ferment by means of native yeasts. The olfactory profile recalls aromas of both fresh and ripe red fruits, toasted hints accompanied by a spicy aftertaste of licorice and pepper
The Cabernet Franc 'Sessanta' is one of the most precious labels from the Ferlat family production. We are in Cormons, in the Collio Goriziano, where this artisan winery is dedicated to producing authentic, pure wines with a personal style. Like other international grape varieties such as Sauvignon Blanc, Chardonnay and Merlot, Cabernet Franc was introduced to Friuli successfully in the second half of the 19th century. The name "Sessanta" refers to the fact that the grapes for this bottle come from an old vineyard planted in 1960.
The Ferlat 'Sixty' Cabernet Franc is a pure expression of the black grape variety of the same name, whose grapes come from an organically certified vineyard that is over 60 years old. As soon as the grapes are ripe, they are carefully selected, harvested by hand, freed from the stems and gently pressed. Alcoholic fermentation takes place in cement vats, using only indigenous yeasts, with a minimum 40-day maceration on the skins, followed by at least 24 months of ageing in oak barrels and barriques, where malolactic fermentation also takes place. After bottling, the wine rests in the glass for another two years before being released.
In the glass, the Ferlat Cabernet Franc "Sixty" presents itself in an intense ruby red with deep violet reflections. The nose is rich and complex, painted by aromas of red and black fruits, liquorice and roasted coffee, framed by spicy and delicately toasted notes. The taste confirms the finesse and elegance as well as the structure. Soft, round and enveloping, with a smooth tannic texture that preludes to the very long epilogue of great taste-olfactory correspondence.
