CHAMPAGNE EXTRA BRUT GRAND CRU 'CHROMATIQUE' STEPHANE REGNAULT DESCRIPTION

The Champagne Extra Brut Grand Cru 'Chromatique' is a refined and mineral interpretation of the Côte des Blancs elaborated by vigneron Stephane Regnault. This label is made from a blend of Chardonnay grapes from different plots scattered around the Grand Cru villages of Le Mesnil-sur-Oger and Oger. Indeed, the bottle's name is a reference to the musical chromatic scale, which encompasses all the notes in the same way that this sparkling wine encompasses the grapes from each plot cultivated by the producer.
Stephane Regnault Champagne Extra Brut Grand Cru 'Chromatique' is a 100% Chardonnay from the Grand Cru vineyards of Le Mesnil-sur-Oger, characterised by its distinctly chalky soils, and Oger, where the soils are richer. Agronomic management is aimed at respecting nature and the ecosystem by excluding the use of pesticides, following lunar cycles for operations and using natural infusions and decoctions. After soft pressing, the must is fermented spontaneously by indigenous yeasts, half of the mass in wooden barrels and the remainder in stainless steel tanks, with complete malolactic fermentation. A 40% vin de reserve is then added to the blend and the sparkling wine base is then placed in the bottle for re-fermentation according to the Champenoise Method, with at least 24 months maturing on the lees in glass before degorgement and dosage Extra Brut.
The 'Chromatique' Champagne Extra Brut Grand Cru Stephane Regnault has a brilliant straw yellow colour with a fine and persistent perlage. The nose expresses pleasant hints of white flowers, lemon peel and white-fleshed fruit, accompanied by evocative vegetal and mineral notes. Fresh and consistent on the palate, where the intense mineral vein and citrus sensations are enhanced by an elegant bubble.
