Bodega K5's 'K 5' is a white wine from pure Hondarrabi Zuri grapes from Aia, an area in the Basque Country made up of steep vineyards not far from the Cantabrian Sea. The grapes are cold macerated and then fermented in stainless steel tanks before ageing 11 months on the lees. The result is a mineral, aromatic and fruity 'K 5', with good evolution and longevity, suitable for drinking throughout the meal.

The 'K 5' from the Basque winery Bodega K5 represents an expression of the local grape variety Hondarrabi Zuri, which stands out for its fresh oceanic essence, reflecting the territory of Getariako Txakolina. The 'K 5' is among the most representative labels of the winery, born from the idea of showing that Txakoli is not only an "easy" wine to consume when young, but can also be a complex and substantial expression suitable for long aging.
'K 5' Bodega K5 is produced solely with Hondarrabi Zuri grapes cultivated using sustainable practices on soils composed of schist, laminated slate, and granite, located at an altitude of about 300 meters above sea level. After harvesting, the clusters are carefully hand-selected and then subjected to a brief pre-fermentation cold maceration, aimed at enhancing the aromatic component of the grapes. This is followed by alcoholic fermentation in small stainless steel tanks conducted by the natural yeasts present on the berries and in the winemaking environment. After the fermentation process is complete, the wine is left to mature for 11 months on fine lees in temperature-controlled steel tanks, with the aim of preserving its freshness and aromas.
The Hondarrabi Zuri 'K 5' from Bodega K5 has a pale greenish-yellow hue with bright reflections. Fresh aromas of grapefruit, lemon zest, pear, and Granny Smith apple stand out on the nose, accompanied by sweet floral notes of chamomile and hints of marine minerals reminiscent of salt crystals. The taste is well-balanced between the softness imparted by long aging on fine lees and the marked oceanic freshness typical of the grape variety and the terroir. On the finish, the citrusy and mineral sensations perceived on the nose reappear, enhanced by the persistent savory trail.
