Sake Dewazakura Junmai Ginjo Tsuyahime from the sakagura Dewazakura Shuzo represents acrystal clear and elegant expression of the Tsuyahime rice variety. This type of rice was developed in Yamagata Prefecture, the home of Dewazakura Shuzo, after 10 long years of research aimed at achieving the highest quality. To enhance the high quality potential of Tsuyahime rice, this variety can only be cultivated in specific areas, by farmers who do not use chemical fertilisers and manure. From a visual point of view, this rice is also characterised by its remarkable uniformity in size and its pronounced white colour.

Dewazakura Shuzo Sake Junmai Ginjo Dewazakura Tsuyahime originates from only rice of the Tsuyahime variety grown within Yamagata Prefecture. Processing begins with husking the grain to a polish of as much as 50%, followed by steaming. This is followed by fermentation of the mass through the action of the Koji fungus, which breaks down complex sugars into simple sugars, and yeasts, the agents responsible for alcoholic fermentation. The fermentation process takes place at a low temperature for quite a long time, in order to promote the aromatic cleanliness of the sake. Once fermentation is complete, pressing is carried out to separate the liquid and solid components, followed by pasteurisation and bottling.

Dewazakura Shuzo's Sake Junmai Ginjo Tsuyahime has a transparent appearance. Sweet sensations of pear and tropical fruit emerge on the nose, enriched by fresh citrus aromas. The taste, pure and elegant, reveals excellent balance and lasting persistence, with a characteristic umami note to accompany the finish.
