VIN YONE DIDIER GRAPPE 2011 DESCRIPTION

The 'Vin Yone' represents one of the most prized labels of artisan winemaker Didier Grappe, an extraordinarily complex and multifaceted Savagnin styled sous voile. The 'Vin Yone' has been produced as if it were a Vin Jaune, thus with a late harvest of Savagnin grapes and aging for at least 6 years and 3 months in topped-up barrels under the veil of flor yeast. However, this label did not obtain the AOC designation as the finished wine does not meet all the standards of the appellation, hence the wordplay 'Vin Yone'. Like other wines by Didier Grappe, the production of 'Vin Yone' is extremely limited.

Didier Grappe's 'Vin Yone' is produced solely from Savagnin grapes grown following the principles of certified organic agriculture on clayey and limestone soils. Harvesting is done by hand slightly late, and the grapes are then gently pressed before spontaneous alcoholic fermentation of the must in 228-liter wooden barrels. The wine ages in the same containers for an extended period of 75 months, during which no racking or topping-up is done to encourage the development of the veil formed by the flor yeast inside the partially topped-up barrels. The 'Vin Yone' is finally bottled without prior clarification and filtration, excluding any addition of sulfites.

Didier Grappe's 'Vin Yone' immediately captivates with its intense golden yellow color with amber reflections. The aroma is an intense and complex celebration of orange, candied fruit, honey, and hazelnut notes, alternating with hints of nutmeg and mineral reminiscences of wet chalk. The remarkable power and initial softness embrace the palate, supported by lively freshness and a sharp savory-mineral stamp, elements that define an endlessly persistent finish.
