SIDRA MONOVARIETAL 'SUHAR' PETRITEGI DESCRIPTION

The Monovarietal 'Suhar' Sidra produced by the artisanal bodega Petritegi is a Basque apple cider distinguished by its captivating citrus and fruity aromas. Part of the selection of ciders from single varieties of indigenous apples, the 'Suhar' is elaborated with apples of the Goikoetxe cultivar, characterized by rather small size and a late harvesting and ripening period. Traditionally, this variety is used both as a table apple and as a cider apple, particularly appreciated for its high sugar content and excellent balance between acidity and bitterness. The Basque term "suhar" means "passion", the same sentiment that guides the production of the Petritegi estate.

The 'Suhar' Petritegi Monovarietal Sidra is made from only Goikoetxe variety apples, selected from the orchards of Petritegi's best local suppliers, grown sustainably within the Euskal Sagardoa designation of origin. After harvesting, the apples are pressed and the juice undergoes alcoholic fermentation. The cider is then left in suspension on the lees, without racking, for a suitable period to enhance the aromas and flavor of the ferment. Throughout the production process, the cider is not filtered and no sulfites are added.

Visually, the Monovarietal 'Suhar' Sidra from Petritegi displays a pale straw yellow hue with intense reddish reflections. The aroma is complex and intense with hints of red apple, lemon, and apricot, sensations that are also found on the palate along with a rather round body. The balance between pronounced freshness and pleasant bitterness is excellent, elements that accompany the long-lasting finish.
