The Spumante Metodo Classico 'Preja 30 Mesi' Extra Brut by Paolo Ferri impresses with its dry and balanced taste, giving a highly gastronomic dimension to this sparkling wine. Paolo Ferri's wine project began in 2012 with the aim of creating great Metodo Classico sparkling wines by combining two varieties that are so distant yet so close: Pinot Noir and Vespolina. The name 'Preja', the selection’s name, comes from the Piedmontese dialect and means "stone".

The 'Preja 30 Mesi' Paolo Ferri Spumante Metodo Classico Extra Brut is produced from a blend of Pinot Noir (60%) and another black grape variety (40%). The vines benefit from the morainic and alluvial nature of the soils and the cool microclimate, characterized by significant temperature variations between day and night. In the cellar, the clusters undergo gentle pressing, followed by the alcoholic fermentation of the must in stainless steel tanks. The subsequent second fermentation of the base sparkling wine occurs in the bottle according to the esteemed Metodo Classico technique, with at least 30 months of aging on the lees in glass before disgorging and the consequent Extra Brut dosage that precedes the final commercialization.

On visual examination, Paolo Ferri's Spumante 'Preja 30 Mesi' Metodo Classico Extra Brut reveals an intense straw yellow hue with fine and persistent effervescence. The aromatic profile opens with fragrant notes of apple, white peach, lychee, and almond, with hints of bread crust due to the long aging on the lees emerging from the background. On the palate, it is fresh, almost crisp, with a balanced progression that rests on a dry and persistent finish, enlivened by the fine bubbles.
