Pietro Zardini's 'Anfora' is a velvety, soft and balanced Recioto della Valpolicella. With its heart of Corvina, Rondinella and Molinara grapes from soils of detritus, calcareous marl and basalt, this wine expresses itself in an intense ruby red colour and an enveloping bouquet of underbrush. The result of careful selection and traditional craftsmanship, the grapes are dried for months before a slow fermentation in amphora, followed by 18 months of ageing in terracotta. Recioto della Valpolicella 'Anfora' is the result of a careful selection of grapes from the highest hills of Valpolicella, where the predominantly red and brown soil of detritus, calcareous marl and basalt gives them a complex and elegant character. These grapes, consisting mainly of Corvina, Rondinella, and Molinara, are harvested by hand in the upper hills and carefully arranged in boxes. The drying process of the grapes, which lasts between 4 and 5 months, is followed by a slow traditional fermentation on the skins with a maceration period of 4-5 weeks. The wine then matures for 18 months in terracotta amphorae, an ancient ageing method that gives the wine an extraordinary depth.
