Sake Fumotoi Junmai Daiginjo Yukimegami by Fumotoi Shuzo represents a fine expression of Japanese sake that is appreciated for its elegance and expressive purity, qualities typical of Junmai Daiginjo. Indeed, the category of Junmai Daiginjo encompasses those sakes made from rice grains that are at least 50% polished, and thus characterised by extreme purity. It is no coincidence that the Japanese expression 'junmai daiginjo' can be literally translated as 'great special brew from pure rice' and this category is rightly considered the most prized in the vast world of sake.

Fumotoi Yukimegami Sake Fumotoi Shuzo Junmai Daiginjo is made from rice of the Yukimegami variety, which was specially developed to produce sake of the Daiginjo category. The rice is polished to an even 35% polish and then combined with high-quality water from the Sakata area, which has a high mineral content and is strictly unfiltered in order to retain all its properties. The fermentation process is carried out according to the traditional Kimoto method, a very ancient practice that consists of preparing a starter with indigenous lactic acid bacteria into which yeasts are subsequently inoculated, specifically those of the Yamagata Kobo KA strain, indigenous precisely to the Yamagata prefecture.

To the eye, the Sake Junmai Daiginjo Fumotoi Yukimegami of the sakagura Fumotoi Shuzo has a transparent and consistent appearance. The aromatic bouquet is delicate yet deep at the same time, with sweet aromas of fruit and flowers reminiscent of Muscat. The progression on the palate is precise, fresh and balanced, with a lingering, clean finish that invites you to return to the glass again and again.
