Bergmannhof's Schiava is a fresh and fine South Tyrolean wine. The Schiava grape variety is also locally called 'Vernatsch' and is among the most iconic and distinctive in South Tyrol. It is produced according to tradition with short maturation in wood, so as to provide structure but preserve its aromaticity. In the glass it is a brilliant ruby red, with aromas of red fruit, violet flowers and light almond notes. On the palate it is fresh and flowing, pleasantly bitter: a perfect companion for the table
Bergmannhof Schiava is a red wine with a pleasantly savoury, almondy flavour, typical of the grape variety. Schiava, 'Vernatsch' in German, is an indigenous South Tyrolean variety, probably brought to the area in ancient times from what is now Croatia by the Lombards during their invasions. Technically, the generic term Schiava refers to a family of grape varieties, consisting of Schiava Grossa, Schiava Gentile and Schiava Grigia.
The Bergmanmhof Schiava represents an expression of the black berry variety of the same name cultivated in the area of St. Paul, a hamlet of the municipality of Eppan. The vines, which are up to 20 years old, are rooted on clay-limestone soils, rich in gravel and with very stony sections. Harvesting is carried out by hand between the end of September and the beginning of October and is followed by red vinification with spontaneous alcoholic fermentation in oak barrels, accompanied by approximately two weeks of contact between the must and the skins. Malolactic fermentation is also carried out and the wine is then aged for 6 months, again in oak barrels, and finally marketed not before an appropriate period of rest in the bottle.
Light ruby red is the colour of Bergmannhof's Schiava, which on the nose expresses inviting hints of red fruits such as raspberry and morello cherry, associated with typical hints of almond that emerge on the finish, as well as floral and spicy nuances. Intensely aromatic and savoury on the palate, with a well-integrated tannic texture that enhances the wine's savoury and mineral profile, pleasantly bitter on the finish. This is a Schiava with a lively character, a perfect companion for cured meats and mature cheeses.
