SPARKLING WINE METODO CLASSICO BRUT 'PREJA 24 MESI' PAOLO FERRI DESCRIPTION

The Spumante Metodo Classico Brut ‘Preja 24 Mesi’ from the Piedmontese producer Paolo Ferri is a sparkling wine with an agile and refreshing style, resulting from a blend of red grapes vinified as white wine and then sparkling. With the ‘Preja’ brand, entrepreneur Paolo Ferri has chosen to focus on the Vespolina grape, native to the Alto Piemonte area, crafting it into an innovative sparkling wine.

Paolo Ferri Spumante Metodo Classico Brut ‘Preja 24 Mesi’ is derived from a blend of 60% Pinot Noir and the remaining 40% from another red grape variety. The vines are grown on soils of morainic and alluvial origin in a cool climate characterized by significant temperature variations between day and night, an ideal condition for the cultivation of grapes intended for sparkling wines. The clusters are carefully selected and then vinified as white wine through gentle pressing, followed by alcoholic fermentation of the must in stainless steel tanks. Once ready, the sparkling base wine is bottled with the addition of tirage syrup for the second fermentation in the bottle according to the Metodo Classico, with 24 months of aging on the lees in glass, after which disgorgement and Brut dosage are carried out.

The ‘Preja 24 Mesi’ Spumante Metodo Classico Brut by Paolo Ferri has a straw-yellow color tending towards golden with a fine and persistent perlage. The nose offers fruity and floral hints of apple, pear, iris, and violet, accompanied by notes of nutmeg and fragrant bakery aromas. The palate impact is young and vibrant, where lively freshness blends with refined effervescence in a persistent finish that recalls the fresh fruit and floral sensations previously detected on the nose.
