Sangiovese Superiore Riserva "Torre di Ceperano" is one of the great red wines signed by Fattoria Zerbina, an important and esteemed winery in Romagna that has been able to distinguish itself for its great interpretations of Sangiovese, obtained thanks to an innovative system of high-density sapling cultivation. The "Torre di Ceperano" takes its name from an ancient medieval fort erected along the Marzeno River, about 10 kilometres from Faenza, and expresses the best characteristics of the terroir of the Faenza area, where the Zerbina farm is based.
Sangiovese Superiore Riserva "Torre di Ceperano" is made from Sangiovese grapes and minimum percentages of Syrah, Cabernet Sauvignon, Merlot and Ancellotta. The production process involves fermentation in medium-capacity steel tanks, with a maceration period varying between 15 and 21 days. Finally, a one-year ageing in 225-litre French and American oak barrels is planned.
Compared to Fattoria Zerbina's other Sangiovese di Romagna wines, such as Pietramora or Marzieno, which are characterized by a longer ageing period, the "Torre di Ceperano" has a young and fresh personality, with lively tannins that are evolving. The nose releases hints of black cherry, ripe red fruits, balsamic herbs and damp earth. In the mouth, it reveals fruity aromas and balsamic thrusts on a texture of great freshness. Thus "Torre di Ceperano" represents the most characteristic soul of Romagna and its most famous grape variety, Sangiovese.
