The "Gallo Otto" is a red wine of the farm Fiorano, composed of a blend of red grapes. At the beginning a part of the grapes are left to dry, once destemmed they are then fermented thanks to indigenous yeasts in 500 L amphorae. Its structure is full-bodied and intense and is accompanied by a bouquet of ripe red fruit, notes of pepper, spices and balsamic aromas.

ROSSO IN ANFORA 'GALLO OTTO' FIORANO 2018 DESCRIPTION

Agricola Fiorano's Gallo Otto Rosso in Anfora represents an audacious Marche interpretation that stands out for its structure and concentration. It is an equivalent blend of some of the most popular and appreciated varieties from Central and Southern Italy, particularly in the regions along the Adriatic coast. The bottle's name, the result of a collaboration between the winery and the singer-songwriter and comedian Elio delle Storie Tese, derives from number 8 of the Contrada Gallo di Cossignano, where the vineyards are located.

The Marche red wine Fiorano Gallo Otto is made from a blend of red grapes grown on clay soil at an altitude of 300 metres according to certified organic farming principles. The bunches, hand-picked with 30% of the grapes left to dry for 30-40 days, are destemmed by hand and then pressed with the feet into 500-litre terracotta amphorae, where spontaneous alcoholic fermentation takes place without temperature control. Maturation always takes place in amphorae, on the fine lees, for about 8-10 months before bottling and further rest.

To the eye, Agricola Fiorano Gallo Otto Vino di Elio in Anfora displays a deep red hue with violet reflections. The nose releases hints of ripe red fruit and black cherry, accompanied by balsamic and spicy notes, pleasantly peppery. On the palate, it reveals a powerful and persistent structure, a dense tannic texture and pleasant returns consistent with the sensations on the nose. A dark, gastronomic red that requires rich and succulent preparations, such as the typical rabbit in porchetta.
