The Gewurztraminer 'Cashmere' raisin wine from the well-known South Tyrolean winery Elena Walch is a dessert wine that captivates with its richness and aromatic intensity. This sweet wine is produced using the technique of drying on racks, not on the vine, a method already used in ancient times by the Romans, who often placed the grapes in special rooms to protect them from the weather.
The 'Cashmere' Elena Walch Passito di Gewurztraminer is made exclusively from grapes of the aromatic variety of the same name grown in the 'Cashmere' vineyard in the Termeno area. The vineyard is characterised by its altitude of 360 metres above sea level and its soil of mixed composition, predominantly limestone. After harvesting, carried out manually at the end of September to preserve the integrity of the grapes, the bunches are left to dry for 4 months on racks in well-ventilated rooms. During this process, the grapes lose up to 65-70% of their weight, concentrating not only sugars, but also aromas and organic acids. This is followed by white vinification through soft pressing and slow alcoholic fermentation for 6 weeks in stainless steel tanks. The high sugar content of the medium then inhibits the activity of the yeasts, which cease fermentation leaving a considerable natural residual sugar. The wine then matures in steel for about a year on the fine lees and after a long rest in the bottle is finally ready for marketing.
Elena Walch's Gewurztraminer Passito 'Cashmere' is amber-coloured. Intense and rich aromatic scents of dried apricot, candied citrus fruit and rose petals emerge from the glass, embroidered with notes of orange and caramel. On the palate it reveals great concentration and complexity, as well as a very pleasant sweetness that contributes to the decisive gustative structure, well balanced by the powerful freshness in an elegant and persistent finish.
