Ettore Germano's Alta Langa Blanc de Noirs Pas Dosé Riserva is a Classical Method sparkling wine that is striking for its breadth and elegance, made by a winery of great importance to both the world of Barolo and Alta Langa. In particular, the vineyards owned in the Alta Langa area fall within the municipal territory of Cigliè, on the western side of the denomination. Here, in the 1990s, the Germano family began experimenting with sparkling wine production, immediately obtaining encouraging results.

Pas Dosé Ettore Germano Alta Langa Blanc de Noirs Riserva derives from pure Pinot Noir grapes cultivated on medium-textured soils, rich in stones and sandy pebbles, located at an altitude between 500 and 580 metres above sea level. The vines also enjoy excellent southeast and southwest exposures, while the harvest is carried out entirely by hand in boxes in order to preserve the integrity of the grapes. In the cellar, the grapes undergo soft pressing, followed by alcoholic fermentation of the must at low temperature partly in stainless steel tanks and partly in 500-litre French oak tonneaux. Refermentation takes place in spring according to the Metodo Classico, with maturation on the lees lasting at least 65 months until final disgorgement and topping off with the same wine, thus without any dosage.

Ettore Germano's Blanc de Noirs Pas Dosé Alta Langa Riserva is bright straw yellow in colour with a fine bubble. The aromas range from fragrant notes of red fruits and delicate nuances of aromatic herbs to deep hints of pastry. Remarkable impact on the palate, where creaminess and freshness coexist in harmony contributing to the lively and elegant finish, with long persistence.
