Frederic Savart is a talented and passionate vigneron who produces extraordinary Champagnes near the small villages of Ecueil and Villers-aux-Noedus, on the north-west side of the Montagne de Reims. Frederic, a great admirer of Burgundy and Piedmontese bottles, is the last heir of the maison founded at the end of the Second World War by his grandfather Renè and then passed in the 1970s into the hands of his father Daniel, who was already distinguished at the time by the only bottle he produced, Brut Selection. Today, Frederic manages a total of 6 hectares classified as Premier Cru divided between Pinot Noir (4 hectares) and Chardonnay (2 hectares). However, what the winery has never renounced is the continuous search for the highest quality, starting, as F. Savart, from the selection of the best grapes. Thus in the vineyard, an artisanal system has been adopted, favouring manual work, low yields and the expressiveness of the soil. The old vines give birth to qualitatively perfect bunches, rich in flavours and aromas, and rest on a characteristic subsoil composed of a clayey, chalky matrix rich in marine fossils, called craie.
Today, the Savart maison has become a symbol of the prestigious terroir of the Montagne de Reims, distinguished by Frederic's savro-faire and the continuous and constant work done in the vineyard. Certainty, depth and elegance are the hallmarks of Savart Champagnes, created with respect for the land and the result of blending the best cuvées. In the cellar, new barrels made from valuable wood from nearby forests are also used during vinification.
Savart Champagnes reflect Frederic's personality and are unique in their type. They are a concentrate of class, style, elegance and depth that go along with the terroir and crystallise in their very fine and persistent perlage what Mother Nature has created, without resorting to oenological shortcuts and renouncing fashions and standardisation of taste. Bubbles with an unmistakable mineral note that manage to balance power and finesse, freshness and envelopment, drinkability and structure, as few other Champagnes know how to do!
