'APPASSIMENTO ROSSO' DOMINI VENETI 2023 DESCRIPTION

"Appassimento" Rosso by Domini Veneti is part of the Le Selezioni Venete collection, a range of traditional wines created to showcase the excellence of a region that can boast ancient and noble traditions in the field of viticulture. It is a label made following the same production process as Amarone and with the same indigenous red grape varieties: Corvina, Corvinone and Rondinella. Gentle vinification and shorter ageing allow the varietal aromatic richness of the grapes to be appreciated more directly, accompanied by lighter tertiary notes.

The "Appassimento" Rosso wine of Domini Veneti is a label with a typically territorial face, produced by Negrar's winery brand of excellence. The choice of grapes from selected plots on the estate and the utmost attention to quality guarantee a consistently high standard. The Corvina, Corvinone and Rondinella vineyards are located on the gentle hills surrounding the city of Verona, at an altitude between 100 and 350 metres above sea level. The vines are around 20-25 years old and are cultivated using the traditional Veronese pergola system, on soils mainly composed of clay with the presence of limestone. After manual harvesting, the ripest and healthiest bunches are left to dry for two months to concentrate sugars and aromas. This is followed by destemming and a slow fermentation at a temperature of 25 °C with a 10 day maceration on the skins and periodic punching-down. Before bottling, the wine matures for several months in wooden barrels.

Domini Veneti's Rosso "Appassimento" is an elegant and profound wine, made according to the most ancient techniques of Valpolicella, with the native vines of the area. It is an ideal bottle to bring to the table to accompany stewed or barbecued red meats or game dishes. To the eye it is an intense ruby red colour with garnet reflections. Rich and enveloping, it releases a fascinating bouquet characterised by aromas of ripe red fruit, cherries, berries, hints of soft spices and nuances of vanilla. Structured and dense with persistent aromas, it conquers the palate with a broad and complex sip, marked by a velvety tannic texture that is well integrated with the body of the wine. The finish is long, harmonious and balanced, with a pleasant spicy finish.
