The ‘Sous la Roche’ Trousseau from Domaine de la Borde Arbois-Pupillin is a 100% Trousseau wine from vines grown on soils composed of a layer of clay and limestone over deep red marl subsoils, characterized by steep slopes. Agronomic management is based on the principles of biodynamic agriculture, and the vines benefit from excellent southwest exposure and an altitude of 350 meters above sea level. Harvesting is done by hand followed by manual destemming of the clusters, with the berries being vinified without being crushed to favor semi-carbonic maceration. The grapes also undergo 2 days of cold maceration, with subsequent alcoholic fermentation taking place spontaneously in stainless steel tanks with skin contact for 20 days. For the subsequent aging phase, barrels of 228 liters of multiple passages are used, containers in which the wine rests for 10-12 months until the final bottling, carried out with minimal sulfite additions.
