WHITE OKUS 2022 DESCRIPTION

The White Okus is a juicy and intensely aromatic wine born from the passion of Luca Dellisanti, whose roots are firmly planted in the picturesque Gorizia. Enriching his expertise with studies in the United Kingdom, Luca has built a rich personal cultural background useful for facing this new challenge in the world of viticulture. Okus White embodies freshness and vitality, and to achieve it, Luca embraces a philosophy of sustainable production, carefully cultivating less than a hectare of vineyards in Cormons and an ancient family vineyard in Gorizia. The project aims to promote authentic and environmentally respectful viticulture, adopting agricultural practices that promote biodiversity and soil health, while avoiding the use of pesticides and synthetic fertilizers. Constant attention to the vineyard and winemaking allows the producer to intervene only when necessary, ensuring an authentic and genuine wine.

To create Okus White, pure Friulano grapes are handpicked and destemmed before starting maceration on the skins. Three days before harvest, Luca prepares a pied de cuve to ensure a clean and regular alcoholic fermentation by indigenous yeasts, and after maceration of about 8 days, the skins are briefly pressed, and the wine is left to rest in stainless steel tanks until March. At the beginning of spring, when nature becomes active again due to increasing temperatures, the only racking is carried out, and then the wine is left to settle and clarify before bottling at the end of July. Bottling is done by hand with a semi-manual filler by gravity, without the use of pumps, filtration, or sulfur additions.

The White Okus stands out for its juiciness and freshness. Once tasted, aromas of tropical fruit immediately burst in the mouth, followed by citrus and floral hints. This vibrant wine is perfect for accompanying light and spring dishes, inviting those who drink it to explore the Friulian territory through its unique and enveloping flavors.
