Until the early 1980s, the Maison always sold the grapes to the Courmas cooperative, then decided to start producing Champagne under its own label. This choice was based on the awareness of the high quality of the grapes, sourced from 5 hectares divided into numerous plots, almost all classified as Premier Cru, located in Coulommes-la-Montagne, Pargny-lès-Reims, Saint-Euphrasie, and Gueux. The grapes come from the estate's most renowned Chardonnay, Pinot Noir, and Meunier vines. Vinification takes place separately for each grape variety and individual plot. Once the fermentation phase is complete, the base wines are aged for several months and blended to create the perfect balance of the cuvée.
