Among the Aosta Valley Alps comes Les Cretes' Chardonnay, a bottle capable of combining energetic freshness and a soft body. Among the countless areas scattered around the world where Chardonnay has proven to adapt superbly, the Aosta Valley should certainly be mentioned. In this alpine setting, vineyards grow among imposing peaks, reflecting in the Dora Baltea River and benefiting from a cool climate characterized by significant temperature swings between day and night. These are the ingredients that give rise to a "mountain" Chardonnay, recognizable by its fragrant aromas and decisive freshness.
Les Cretes Chardonnay is made from only grapes of the international variety of the same name, growing between 600 and 800 meters above sea level in the areas of Frissonnière, Saint Christophe and Aymavilles. The plants are about 20 years old and are rooted on loose soils of morainic origin, characterized by an abundance of sand. Manual harvesting is followed by chilling and subsequent soft pressing of the whole bunches, with the must undergoing a 12-day alcoholic fermentation in temperature-controlled stainless steel tanks. The subsequent period of elevation on fine lees also takes place in stainless steel for 3 months and precedes bottling.
