The Fiano del Salento "Folium" by De Quarto is a Salento white made from Fiano, a typical Campania grape that has, however, found a home in Puglia, where it acquires unique characteristics. The De Quarto winery pays homage to this peculiarit: 'folium' means petal, a reminder of the great fragrance developed by this variety in these lands. The Fiano del Salento 'Folium' from the De Quarto winery is a fragrant and floral interpretation of this white grape variety of Greek origin that is widespread in Campania, Apulia, and other regions of southern Italy. Fiano seems to have been introduced to the Apulian territory towards the end of the 13th century by Charles II of Anjou, although it was probably present in the region even earlier. The aromatic character of this wine is highlighted by the very name on the label since the Latin term 'folium' means 'petal'.
De Quarto Fiano del Salento 'Folium' is made from only Fiano grapes grown without synthetic chemicals. The vines are grown using the Apulian alberello system on red, calcareous soils in the commune of Lizzano, near the Ionian Sea. The harvest is carried out entirely by hand in the first ten days of August, and the grapes are then transferred to the cellar and vinified in white with soft pressing and alcoholic fermentation at a controlled temperature in stainless steel tanks. The subsequent elevation phase, which lasts a few months, also takes place in stainless steel, and the wine is finally marketed after a further brief rest in the bottle.
On visual inspection, Fiano del Salento De Quarto 'Folium' reveals an intense straw yellow hue. Subtle and intriguing aromas of melon, peach, orange peel and jasmine describe the aromatic bouquet, together with resinous and iodine hints. Its taste development is fragrant, delicate and drinkable, endowed with bright freshness and a long, savoury finish in which fruity and floral sensations re-emerge. This Fiano is the ideal companion for hors d'oeuvres or seafood first courses, especially those with shellfish or molluscs.
