Vigneti Cenci's Franciacorta Brut 'La Capinera' is a versatile sparkling wine produced with a percentage of Pinot Bianco, the winery's hallmark. Moreover, this winery works with the SoloUva method, a sparkling wine-making technique for which only grape must is used to trigger re-fermentation in the bottle. The result is an extremely fragrant bubble, with fresh hints of apple and lemon that open the scene to hints of pastry and almond. The palate is distinctly fresh and the clean, gastronomic sip makes it a perfect companion for the entire meal.
Vigneti Cenci's Franciacorta Brut 'La Capinera' is a Classical Method wine with a balanced, appetising drinkability and great pleasantness. The appellation 'La Capinera' pays homage to the little bird of the same name that during the summer season is wont to perch on the leaves of the vines in the estate's vineyards. This is a blend of Chardonnay and Pinot Blanc, a Blanc de Blancs therefore, which effectively presents the style of the Vigneti Cenci winery, a style of balance, structure and minerality.
Vigneti Cenci Franciacorta Brut 'La Capinera' consists of a blend of Chardonnay (70%) and Pinot Bianco (30%) grapes grown on the slope of Monte Orfano, within the municipality of Cologne, in the south-western area of Franciacorta. The soil consists of an ancient, stepped colluvial layer on a rocky substratum of conglomerate gravel, while the exposure is south-west. Once harvested, the grapes are vinified in white by soft pressing and alcoholic fermentation at a controlled temperature. Subsequently, the base wine is bottled with the addition of a draught syrup composed of sugars exclusively from the grapes, in order to achieve re-fermentation in the bottle according to the Metodo Classico, thus excluding the use of exogenous sugars. Refinement on the lees lasts for at least 24 months, at the end of which disgorgement and Brut dosage is carried out, once again with sugars coming exclusively from the grapes.
'La Capinera' Vigneti Cenci Franciacorta Brut is straw yellow in colour with greenish highlights and a very fine effervescence. The nose offers hints of Mediterranean citrus fruits, such as citron, lemon and orange, as well as notes of yellow-fleshed fruit, moss, mint and thyme. Balanced and full-bodied on the palate, with a fresh and elegant progression.
