Franciacorta Extra Brut 'Vintage Collection' is a bubbly of exquisite class and refinement that expresses all the know-how of Ca' del Bosco, a benchmark for the Franciacorta territory. The 'Vintage Collection' is a selection that includes three vintage labels, including this Extra Brut, produced by skilfully interpreting the characteristics of a single vintage. Underlying the blending of this sparkling wine is the skilful combination of the power of Pinot Noir and the elegance of Chardonnay and Pinot Blanc. These qualities are further enhanced by the low dosage, which does not mask or alter the wine's characteristics.
The 'Vintage Collection' Extra Brut Ca' del Bosco Franciacorta originates from a blend of Chardonnay, Pinot Noir and Pinot Blanc grapes from 43 different vineyards that are organically certified. Following the harvest, the grapes are washed and dried according to the Ca' del Bosco method, and then undergo a gentle pressing in the absence of oxygen. The must then ferments in small oak barrels, the same containers where the wine matures for 5-7 months until it is drawn off, which takes place in the bottle according to the Metodo Classico. The wine rests on the lees in glass for at least 48 months, after which it is disgorged, in the absence of oxygen, and then dosed as Extra Brut, at 1.5 g/l residual sugar. Processing in the absence of oxygen then makes it possible to considerably reduce the amount of added sulphites.
Ca' del Bosco Franciacorta 'Vintage Collection' Extra Brut is a straw yellow colour tending towards golden with a subtle and lasting effervescence. The nose evokes intense and pleasant scents of peach, citrus, toasted hazelnut, coffee and butter biscuit. Fresh and well-structured on the palate, with an elegant savouriness that echoes the citrus returns and mineral timbre on the finish.
