Ferghettina's Franciacorta Brut Saten is produced in Cazzago San Martino by a family-run winery. Roberto Gatti learned the rudiments of viticulture while working for well-known Franciacorta brands and managing both the production side of the winery and the work between the rows. In 1990 with his wife Andreina, he took over the management of about 4 hectares of land, and in 1991 his first bottles went on the market. The name "Ferghettina" is inspired by the toponym of the plot of land on which the winery's headquarters is built. In 1992 the first Franciacorta was released, brut that is still the symbol of the business. Today there are about 200 hectares fully planted with vines, located in 11 communes in Franciacorta, managed in part with the help of Roberto's children Laura and Matteo, who put to good use every day their academic teachings and those learned in the field.
The pure Chardonnay grapes in Ferghettina's Franciacorta Brut Saten are grown at an elevation of about 250 meters above sea level. The climate here is considered Mediterranean since Franciacorta is embedded in the pre-alpine system and feels the influence of the breezes from Lake Iseo; the Alpine arc protects the rows from cold winds from the north and Atlantic disturbances. Grapes are harvested manually around mid-August because of the particularly hot summers that force an earlier harvest. The whole cluster is gently pressed, and during vinification, the first-pressing must, and second-pressing must not intended for bottling are separated. Alcoholic fermentation takes place in steel and re-ferments in the bottle according to the Champenoise Method.
To the eye, Ferghettina's Franciacorta Brut Saten appears bright yellow with a fine, persistent perlage. The aromas are reminiscent of ripe yellow-fleshed fruit, candied fruit and characteristic notes of freshly baked bread crust; in the mouth, it is creamy, elegant and enveloping with fresh, savoury notes on the finish that entice glass after glass. In pairing, it is excellent with fish tartare dishes, sushi and sashimi, and pasta dishes topped with shellfish.
