Gin Saline Insulae

The Saline Gin from the Sicilian distillery Insulae is a gin with a marine soul distilled in small batches in the London Dry style. Started in early 2019 by the young Marco Nicosia and Alfredo Mineo, the Insulae project aims to convey the Mediterranean essence of Sicily through the production of premium gin with a unique taste. To pursue this goal, Marco and Alfredo use ingredients from fascinating locations scattered throughout Sicily, whether it's the salt pans of Trapani and Paceco, the marine environment of the island of Pantelleria, or the citrus groves of the Catania province.

Insulae Saline Gin is crafted from selected premium ingredients found throughout Sicily, such as capers and cucunci from the island of Pantelleria, and salt from the salt pans of Trapani and Paceco, combined with the essential juniper, lemon, and oranges of Sicily. The different ingredients are infused in hydroalcoholic solution and then distilled in ancient copper stills fueled by high flame, following the London Dry style.

Visually, Insulae Saline Gin has a transparent and crystalline appearance. The aromatic profile highlights intense perceptions of salt crystals accompanied by citrusy notes of lemon and orange, as well as spicy nuances of juniper, cardamom, and coriander, and herbal hints of capers and cucunci. Dry and aromatic on the palate, with fresh citrus sensations accompanying the clean and elegant development, strongly salty and Mediterranean. This 100% Sicilian London Dry Gin can bring its original personality to classic gin-based cocktails like the Dry Martini and the Gin and Tonic, perhaps served with a twist of Sicilian citrus to enhance even more the freshness and territoriality of this spirit.
