Lago di Caldaro Classico Superiore 'Quintessenz' from Cantina Caldaro - Kellerei Kaltern originates in South Tyrol near Lake Caldaro. The winery's origins go back centuries, since the activity began in the early 1900s: the history sees five wineries struggling with difficulties and changes, from the glorious times of the Austro-Hungarian Empire to the wars and the separation of South Tyrol from Austria. Today, we can speak of a winegrowing cooperative of around 650 members with a total of 450 hectares under vine. The shared project is the love for wine and the opportunity to enhance the South Tyrolean territory, in the conviction that only extreme attention to nature and its fruits can generate products of impeccable quality.
The Schiava del Lago di Caldaro Classico Superiore 'Quintessenz' grapes of Cantina Caldaro - Kellerei Kaltern grow on vines with an average age of between 30 and 70 years. The climate is characterised by particularly cold but at the same time sunny winter months. In spring, temperatures remain cool and then rise considerably in summer, which is hot and dry. The location is south, which guarantees excellent ripeness of the grapes at harvest time, and the soil is rich in clay and limestone. Harvesting takes place between the end of August and the beginning of September; in the cellar, the must macerates on the skins for 10 days, followed by malolactic fermentation; it matures on the fine lees for 6 months and is then refined a few months in wooden barrels.
The Lago di Caldaro Classico Superiore 'Quintessenz' from Cantina Caldaro - Kellerei Kaltern presents itself in the glass as a ruby red with brilliant reflections. The nose smells of ripe cherries, raspberries and strawberries with light almond notes on the finish; on the palate it is elegant, full of character and enveloping with soft, well-integrated tannins and a long finish. It pairs perfectly with Tyrolean antipasti such as speck and/or fresh mountain cheeses made from cow's milk. Perfect to be enjoyed in the company of lifelong friends at carefree get-togethers, sipping a wine that is the result of careful and constant work that enhances the genuine flavours of the South Tyrolean land.
