Castelvecchio's Malvasia 'Dileo' is a label that the winery dedicates to its founder. An important homage, therefore, that presages the importance of the bottle in front of us. The choice of over-ripening and drying the berries leads to a concentration of softness that can be detected from the very first sips, ample and full in presenting a long savoury timbre that continues into the finish. An excellent Malvasia, to be tried with fish soups 'seasoned' with tomato.
"Dileo" is made by the Castelvecchio winery from the Malvasia Istriana grapes grown in the rows of Karst Natural Park, characterised by a calcareous subsoil of red soil rich in minerals. The vines are daily 'pampered' by the Bora, a lashing wind that blows through the vines, preventing the birth and development of mould. A part of the bunches undergoes a slight withering, while the remaining part is over-ripened. Soft pressing is carried out, and fermentation of the must take place in stainless steel tanks. Maturation lasts a few months and takes place in stainless steel on the noble lees.
"Dileo" Malvasia di Castelvecchio presents itself to the eye with a typically straw-yellow colour, crossed by a few more greenish flashes. The olfactory spectrum is delineated around herbaceous and vegetal touches, from which also emerge fruity references and subtle saltier nuances. On the palate, it enters with a light, dynamic and full body, characterised by a fresh and mineral mouthfeel that closes with excellent persistence. This label takes shape from a particular production process and thus demonstrates all the skills of a winery that loves to decline the terroir of the Karst with countless nuances.
