'Nilda' from Case Corini is a red wine blend of grapes named after Lorenzo's grandmother. One of the winery's most recent releases, after gentle pressing and alcoholic fermentation using natural, local yeasts, maceration lasts 3-4 weeks without any oenological intervention. Case Corini dedicates 'Nilda' to the figure of Lorenzo Corino's paternal grandmother: Leonilda Zari appears in the management of the estate as early as 1944, when she moved there following her husband Pietro, one of the sons of that Centin to whom another label is dedicated.
'Nilda' is one of Case Corini's most recent creations, the fruit of a vineyard established some 20 years ago through replanting vines that had reached the end of their life cycle. It is planted with different biotypes of the blackberry symbol of Piedmont and other ancient local varieties and extends over the gentle slopes of the commune of Costigliole d'Asti, an area between the Langhe and Monferrato. The chosen form of cultivation is espalier to be able to avoid topping operations and guarantee the development of the foliage until the end of the season: no herbicides or synthetic products are used in the field, and treatments are only carried out when necessary with copper and sulphur. At an altitude of around 260 metres above sea level, the soil is essentially composed of marl and Asti sand, worked with light equipment to not affect compaction too much, while the harvest and other work are carried out by hand. Harvesting generates very limited yields at the moment of perfect fruit ripeness and is carried out in small crates. The bunches are pressed directly, and the must ferments spontaneously thanks to the work of only indigenous yeasts inside steel tanks. Maceration on the skins continues for up to 4 weeks, interspersed with periodic manual punching-down. The wine is finally bottled without filtration, clarification, or the addition of sulphites.
"Case Corini's 'Nilda' has a deep ruby red colour. The aromas are intense and suave, presenting an impact of ripe red fruits and then veering towards autumnal and shadowy tones of undergrowth, wet bark and earthy hints. The final nuance offers a nice perception of sweet chocolate toast. The palate reveals a delicately soft structure, with a very low dose of tannins and a verve of freshness from the varietal character. A typical and well-balanced red wine to accompany fresh pasta dishes with sauce and local salami or sausage stews.
