The "Bianchi Grilli per la Testa" Pecorino from the Torre dei Beati winery is one of the most interesting versions of this ancient native Abruzzo grape variety, rediscovered only in recent decades after a long period of neglect. It is a rich, intense and complex white, characterized by a vibrant freshness that makes it particularly enjoyable. It originates in the hilly area of Loreto Aprutino, which has always been known as one of the best ever for its special soil and climate conditions. The proximity to the peaks of the Gran Sasso and the sea creates an ideal situation for the cultivation of vines, which are expressed at excellent levels of quality.
"Bianchi Grilli per la Testa" is the flagship Pecorino of Torre dei Beati, which manages a wonderful estate of some 20 hectares, cultivated under certified organic farming. The vineyards are located in a landscape that is still wild and rich in biodiversity, surrounded by olive groves, arable fields and woods. The property is located at an altitude between 250 and 300 meters above sea level, on medium-textured soils of predominantly clay and limestone matrix, with sandy substrates. Harvesting is done manually with several passages in the vineyard and a rigorous selection of the bunches. The Pecorino grapes come from a single half-hectare plot with east-facing exposure. After soft pressing, the must ferments in barriques and matures in wood for about a year on the fine lees, then completing ageing with at least 8-10 months in the bottle.
