The Pigato "Bon In Da Bon" is a very expressive and territorial wine made from grapes harvested late from vines that are about 60 years old. It has a rich and intense bouquet, from which hints of fruit and citrus fruits stand out. On the palate it is dry, soft and mineral, with good persistence
Bio Vio's Pigato 'Bon in Da Bon' is produced in Liguria in the hinterland of Albenga. The winery has been managed by the Vio family for generations: the current project is to give life to a true polyculture, i.e. an agricultural reality where vineyards, olive groves and the cultivation of aromatic herbs coexist. Today, it is Caterina, Camilla and Carolina who are fully responsible for the farm's activities, taking care of all aspects down to the smallest detail, from working the land to providing hospitality. The chosen cultivation regime is organic, certified since 1989, following the philosophy according to which nature and its fruits deserve the greatest possible respect, in the interest of future generations; in this regard, the Didactic Cellar project is relevant, useful for bringing school-age children closer to the world of agriculture.
The vineyards of Bio Vio's Pigato 'Bon in Da Bon' are located in the Marixe Region in Bastia d'Albenga. The altitude is around 100 metres above sea level and the soil consists mainly of marly stone and iron for wines with a structured character. The climate is distinctly Mediterranean with warm, sunny summers characterised by breezes from the Ligurian Sea and mild, often rainy winters. The grapes are harvested manually around the end of October, when they have reached full ripeness. A 24-hour cryomaceration takes place in the cellar, followed by soft pressing. Fermentation is spontaneous thanks to the action of indigenous yeasts in steel tanks. It matures 6 months and stays 3 months in the bottle.
To the eye, Bio Vio's Pigato "Bon in Da Bon" is an intense straw yellow with brilliant reflections. The bouquet is reminiscent of the aromatic herbs typical of the Ligurian countryside, ripe yellow-fleshed fruit such as pear and pineapple and summer jasmine; in the mouth it is enveloping, full and inviting with a pleasant final persistence that lingers cup after cup. It pairs perfectly with shellfish, mollusc dishes and fish soups; also interesting with fresh cow's milk cheeses. A perfect ambassador of the extraordinary potential of the western Liguria territory, with genuine and authentic flavours and ideal for romantic dinners by the sea at sunset in summer.
