Vinification and ageing exclusively in steel tanks preserve Primitivo's most accurate and authentic face, with its warm and soft character featuring rich, ripe, and enveloping fruit. Its naturally harmonious and balanced palate perfectly expresses the Mediterranean characteristics of its terroir.
The red "Memoria" is one of the labels that best illustrates the work of the Cantina dei Produttori di Manduria, aiming to enhance the typical grape varieties of the region. With over 400 members managing 900 hectares of vineyards, over half of which are planted with Primitivo, it is a cooperative that showcases the dedication to the territory's typical vines. The vine age ranges from 20 to 50 years, and the most common training system in older vineyards is the traditional bush vine, while younger plants often use the trellis system. The average density per hectare ranges from 4000 to 5000 vines, yielding less than 90 quintals per hectare. The presence of so many plots allows them to select the best grapes each year, consistently producing quality wines.The Primitivo grape corresponds to an ancient Slavic variety called Crljenak Kaštelanski or Tribidrag and shares the same DNA with the Californian Zinfandel. Its name comes from its early ripening, with harvest usually occurring at the end of August. Fermentation occurs in stainless steel at controlled temperatures and the wine ages for several months in steel before being bottled.
