PROSECCO DI VALDOBBIADENE SUPERIORE BRUT 'PRIOR' BORTOLOMIOL 2023 DESCRIPTION

Bortolomiol's Prosecco di Valdobbiadene Superiore 'Prior' was born in the heart of Valdobbiadene, home of world-famous white wines. The Bortolomiol family has historical roots in wine production. In 1949, Giuliano Bortolomiol founded the winery together with his brothers Labano and Guglielmo. Having graduated from the Scuola Enologica di Conegliano (Conegliano School of Oenology), Giuliano decided to set to work with modern processing and vinification techniques, proving to be a thinker, an innovator and a visionary. In 1960 the first Prosecco Brut went on the market, becoming the symbol of the business; a few years later, together with eleven other producers, he founded the Consortium for the Protection of Prosecco di Conegliano and Valdobbiadene wine, a fundamental institution for obtaining the DOC in 1969. Today the business is completely female-led with Giuliano's granddaughters, who look to tradition and towards the future.

The vineyards of Bortolomiol's Prosecco di Valdobbiadene Superiore "Prior" are situated on the Valdobbiadene hills; the human hand intervenes in a conscious and responsible manner, respecting the ecosystem surrounding the vineyards. The latter are situated at an altitude that varies between 70 and 450 metres above sea level; the Monte Cesen and Col Visentin mountain ranges protect the rows from the cold winds coming from the north, so that only moderate winds arrive, which are useful for perfect cluster growth. Temperature variations between day and night are also important. The grapes are harvested manually between 15 and 30 September; in the cellar, the bunches are softly pressed. Alcoholic fermentation takes place with selected yeasts in steel and the mousse takes place between 25 and 30 days. It matures 2 months in the bottle.

To the eye, Bortolomiol's Prosecco di Valdobbiadene Superiore "Prior" is a straw yellow with brilliant reflections, while the perlage is fine and persistent. The aromas are reminiscent of white pulp fruits and white flowers such as jasmine in combination with hints of aromatic herbs and citrus fruits; on the palate it is fresh, lively and vivacious with sapidity on the finish that balances the structure and entices glass after glass. In pairing, it is perfect with stewed fish dishes, smoked salmon and first courses with seasonal vegetables and shellfish. A product to be consumed at aperitifs with work colleagues to celebrate important milestones.
