Thickness and refinement are characteristics that undoubtedly ascribe the wines of the Clivi, a winery located in the Corno Di Rosazzo area that has now become an stainless reference point for those who go in search of territorial and deeply saline wines, free from heaviness and overly dense structures. Ribolla, Friulano, Malvasia, Verduzzo, and a bit of Merlot also find their best interpretations thanks to a non-interventionist approach, both in the vineyard and in the cellar. This white wine is made from pure Ribolla Gialla grapes, from 30-year-old vines resting on marl-rich, south-facing soils. In the vineyard, as already mentioned, the dictates of organic farming are followed, excluding the use of any chemical or synthetic substances. In the winery they proceed with equal zeal, with fermentations occurring spontaneously in steel containers and aging of the liquid that takes place in the same container for 6-8 months in contact with the fine lees.
The Ribolla Gialla presents itself in the glass with an light straw yellow color. High aromatic definition on the nose, extremely crisp and refreshing, characterized by hints such as golden apple, verbena, lemon peel and saline puffs. On the palate the wine proves to be soft and graceful, perfectly balanced between saltiness, freshness and body.
