Produced in a land famous for fresh, light wines, Beaujolais, it is made from white-fleshed Gamay grapes and is produced according to the Ancestral Method style, fermented with indigenous yeasts. The 'Rosé pour Buller' from Domaine des Canailles is a classic sparkling wine sur lies, which perfectly interprets the nouvelle vague of natural wines. It is made from pure Gamay, the symbolic vine of the Beaujolais region, born from a spontaneous cross between two very old varieties: Gouais Blanc and Pinot. The sparkling process reveals an unprecedented face of this grape, characterised by a rich, fruity aroma and a pleasant freshness. A bottle with a young and immediate character, suitable for an aperitif with friends or to accompany a platter of tasty cold cuts.

The pet-nat 'Rosé pour Buller' from Domaine des Canailles is the fruit of the experience of a winery located in Ternand, in the south of Beaujolais. The property covers 8 hectares, conducted under organic farming since 2005 and applying biodynamic practices since 2019. The vineyards are located between 450 and 550 metres above sea level in an area with a mild climate and very suitable for viticulture. The grapes come from Gamay vineyards over 50 years old, cultivated on soils resulting from the disintegration of granite rocks. The must is vinified in white after soft pressing with brief contact on the skins. Spontaneous fermentation takes place only with the use of indigenous yeasts in temperature-controlled stainless steel tanks. Secondary fermentation takes place in the bottle according to the Ancestral Method without final dégorgement and leaving the yeasts at the bottom of the bottle.

It has a beautiful cherry pink colour, continuous perlage, and a delicate, soft mousse. Fragrant aromas of citrus peel, floral nuances of orange blossom, aromas of pink grapefruit, pomegranate, raspberries, morello cherry and hints of yeast and bread crust characterise the bouquet. Pleasantly fruity and rich, it has a juicy mouthfeel that lengthens towards a finish of pleasant citrus freshness.
