With good structure and aromatic richness, it is a rosé wine with an intense, soft face, which goes very well with slightly spicy dishes, with first courses with tomato-based sauces, with shellfish, seafood guazzetti, salmon or with a platter of tasty cured meats typical of Calabria.
Filippo Brancati's 'Carcare' Rosato is one of the best-known labels of this small winery, which produces artisanal wines that authentically represent the territory of the Calabrian coast. The estate is located near Palizzi, in the Jannacci locality, where viticulture has been practised for thousands of years. The Nerello vineyards are cultivated along the southern slope of the Ionian coast at an altitude of 250 metres above sea level, facing east and northeast. The climate is typically Mediterranean, warm and dry, and always well-ventilated by sea breezes. The vineyards are located on terraces, characterised by medium-textured soils of a clayey nature. The grapes are harvested by hand slightly in advance and are then pressed very softly with brief contact with the skins. The must is vinified white with fermentation in stainless steel tanks at a controlled temperature of 13-15 °C. The wine matures sur lie for six months in steel tanks.
