Sake Junmai Yonetsuru Pink Kappa is anoriginal interpretation of sake in a "pink"version, made in limited quantities by Japan's Yonetsuru Shuzo with rice exclusively from the Yamagata prefecture. The characteristic pink colour of this sake is due to the intervention of so-called 'red yeast', a particular strain that can accumulate a certain amount of red pigments during alcoholic fermentation. These pigments combine with the transparent appearance of the rice must, called 'moromi', to result in the development of this fascinating pink hue. It is a rather delicate yeast, which is why it requires great care during fermentation, otherwise it could give way to other undesirable yeasts or bacteria.
Pink Kappa Yonetsuru Shuzo Sake Junmai originates from only rice grown within the Yamagata Prefecture, milled to a polish of 65%, in the Junmai category therefore. This is followed by steaming of the grains and then saccharification by the Koji fungus, which breaks down the complex sugars into simple sugars. These are then metabolised by the red yeast during alcoholic fermentation. The production cycle finally ends with pressing and bottling.
Yonetsuru Shuzo's Sake Junmai Pink Kappa has a beautiful soft pink hue. The aromatic bouquet expresses graceful scents of peach, black cherry, strawberry and acerola. The taste is delicate and refreshing, very slender and flowing thanks also to the measured alcohol content, with a pleasant sweet-and-sour finish. Thanks to the non-excessive, semi-dry residual sugar, this pink sake can be paired with both savoury cuisine and fruit-based desserts.
