Fresh, rocky and well-structured, Peter Dipoli's "Voglar" Sauvignon is part of the Olympus of Italy's great Sauvignons. "Voglar" is the ancient name of the area in which it originates, where Peter Dipoli's historic vineyard is located in Penon, below the municipality of Cortaccia. These are terraced slopes extending over 3 hectares located between 500 and 600 m above sea level.
The high hillside favours the complete ripening of the grapes without loss of acidity and aromas, from these grapes, Sauvignon "Voglar" is born. The harvest usually falls between late September and early October, after which the grapes are brought to the winery and pressed. The must ferments for 10 days in large acacia barrels and then, avoiding malolactic fermentation, is scheduled to rest on the lees until May, with batonnage every 10 days in the first few months. Final ageing takes place in the bottle, where the wine remains for several months before release.
Sauvignon "Voglar" is a white wine with complex aromas that synthesize the best characteristics of the grape variety. The nose is enchanted by aromas of tropical fruit, citrus, delicate herbaceous and rocky notes. The sip is fresh and energetic, savoury and structured, taut and very long. The full-bodied, rich personality allows the wine to withstand medium-term bottle ageing, during which the wine continues to evolve and open up. Recognized by critics and the public alike as one of the greatest expressions of Sauvignon, Voglar is surely at the top of South Tyrolean's white wine production.
