SIDRO 'NANTOSUELTA' DOMAINE JOHANNA CÉCILLON 2022 DESCRIPTION

Domaine Johanna Cécillon presents 'Nantosuelta' cider, an apple fermented cider of disarming smoothness, also endowed with commendable depth and harmony. The first evidence of cider production dates back to 55 BC, when Julius Caesar first attempted to invade Britain and reported that the Celts were dedicated to fermenting apple juice. To honour this long tradition, Johanna named its labels after Celtic deities such as 'Nantosuelta', the goddess of spring whose name means 'valley of the sun'.
Domaine Johanna Cécillon's 'Nantosuelta' cider originates from a blend of different apple varieties cultivated in two orchards on soils consisting of granite and shallow clay, following the principles of organic and biodynamic agriculture. In particular, the orchard on a ridge provides sweeter apples while the one on the valley floor produces more acidic fruit. Harvesting is carried out by hand between October and December and the apples are then stored for a short period so as to progress with ripening off the vine. The first alcoholic fermentation takes place in steel tanks and the liquid is then placed to mature in oak barrels. In May, the wine is bottled and the second fermentation takes place in glass thanks to the action of indigenous yeasts. No gasification, pasteurisation or sulphurisation is carried out throughout the entire process.
Nantosuelta' Cider Domaine Johanna Cécillon is bright yellow in colour with amber highlights. The aromatic bouquet is rich and complex, defined by hints of dried apricot, white flowers, sweet spices and honey. The taste is well balanced between the soft notes of candied fruit and vanilla and the more acidulous ones of citrus fruits, in a harmonious and very pleasant development.
