The Spumante Rosé 'Llopit' is an ancestral method with a fresh and immediate character. Originating from Languedoc, it is made from pure Macabeu grapes and re-fermented in the bottle without disgorging. Its rosé colour, slightly cloudy, is traversed by a fine and persistent perlage. The nose opens with hints of strawberry, peach, spices and a delicate salty hint. On the palate, it surprises with its energy and tension, accompanied by a lively freshness that makes it extremely pleasant and easy to drink
The Spumante Rosato Ancestrale 'Llopit' of the Tutti Frutti Ananas project represents theencounter between Italian and French winemaking. In fact, behind the Tutti Frutti Ananas reality lies Manuel De Vecchi Staraz, a young producer of Florentine origin settled in the area of Banyuls-sur-Mer, in the French Eastern Pyrenees, where he started collaborating with other artisanal producers to give life to this project. What's more, the bottle-refermented 'Llopit' is made from Barbera and Merlot grapes, one native to Piedmont and the other from Bordeaux, further underlining the Italian-French identity of Tutti Frutti Ananas. These come from trusted winegrowers in the Veneto region with whom Manuel collaborates.
Rosé 'Llopit' Tutti Frutti Ananas Spumante Ancestrale is made from a blend of Barbera and Merlot grapes grown in the Veneto region following sustainable agronomic practices based on organic farming principles. The grapes are vinified in rosé through a brief skin maceration, followed by spontaneous alcoholic fermentation, entrusted solely to the intervention of indigenous yeasts. Light frothing is carried out according to the Ancestral Method, bottling the must towards the end of the fermentation process, without the addition of exogenous sugars. During the entire production cycle, the use of sulphur dioxide is excluded, as is the use of clarification or filtration.
The Rosato Spumante Ancestrale 'Llopit' by Tutti Frutti Ananas has an intense pink colour slightly veiled by a soft and persistent effervescence. The nose has hints of red berries, yeast and bread crust, combined with salty hints. The taste is lively, cheerful and taut, with a distinct mineral freshness on the finish.
