The Spumante Brut from the D'Araprì winery is the epitome of classic method sparkling wine produced in Puglia. Brut by d'Araprì is a clear example of how the Italian scenario of sparkling wines has known new docks, with results of considerable importance. This model stays evident in the history of D'Araprì, a small company founded in the north of Puglia by the three friends D'Amico, Rapini and Priore (the brand name comes from the acronym of their surnames) with the desire to produce only Champenoise Method and betting on the autochtonous Bombino Bianco, which constitutes the first grape of this Brut.
Since 1979 the three friends worked on their fields located between the Majella and the Gargano, in the countryside of San Severo, taking advantage of a microclimate that protects the vines from frost and ensure good ventilation that does not allow fungal diseases to grip on the soils. The vineyards are cultivated in low density (about 3500 plants per hectare) with the system of Pugliese espalier.
The work in the cellars dating back to the seventeenth century, may remind of the small récoltant-manipulant of Champagne, with the entire procedure from riddling to disgorgement performed manually. This commitment is combined with a strong research onto Bombino, a vine that can return wines of great substance and longevity, capable of developing large personality in this sparkling version. The Brut produced out of Bombino, with a percentage of Pinot Noir, is a fragrant wine with a good structure and fine floral tones, far above the average able to accompany rich fish courses.
