The Metodo Ancestrale Brut "Ru" is among the labels that Donato Angiuli dedicates to Maccone, a man of great personality who worked for years in the family's vineyards and winery and to whom an indelible memory is dedicated through a sparkling wine that undoubtedly speaks of territory.
Donato Angiuli elaborates Spumante Brut "Ru" by vinifying in purity a native variety of the family's territory, undoubtedly typical as much as absolutely unknown outside its borders. Maresco's grapes come from old bush-trained vines that boast venerable ages ranging from 50 to 80 years, raised on limestone-clay soils in the territory of the so-called Murgia dei trulli, overlooking the Itria Valley. The area of the town of Cisternino lies on the plateau parallel to the Adriatic Sea, at an altitude of about 240 meters above sea level, bathed by the sun and invested by marine influences. Harvesting is carried out manually around the end of September, pandering to the ripening stages in preparation for sparkling, and brings a yield of about 50 quintals per hectare. In the winery, the grapes undergo a 2-day cryomaceration and are then crushed and destemmed to initiate alcoholic fermentation in temperature-controlled steel tanks. The must is bottled without filtration when 24 grams/liter of residual sugar is reached, according to the Ancestral Method technique: frothing is followed by a 48-month rest on the lees inside the underground rooms, which ends with remuage and degorgement operations. Mushroom corking with a metal cage defines the habillage of the bottle.
Donato Angiuli's Spumante Brut "Ru" offers a clear and lively appearance to the eye, with a straw-yellow color furrowed by continuous and fine effervescence. The aromas are crisp and satisfying, inaugurated by a fruitiness of apple juice, with citrus vibrations of grapefruit, joined then by floral sensations and a peculiar hint to pastry and bakery nuances. The sip is pleasantly fresh and vertical, with subtle minerality and good persistence. An Ancestral Method that goes well with finger food aperitifs and fish cuisine.
