The Derthona Timorasso 'Calypsos' from the Piedmontese Montalbera winery is a structured and mineral white wine with excellent longevity. Montalbera is an extensive cellar in Lower Piedmont that owns a vineyard estate of approximately 150 hectares distributed across some of the most prestigious areas of the region, including Langhe, Monferrato, and precisely Colli Tortonesi, the territory from which the Timorasso grapes destined for 'Calypsos' originate.
The Montalbera 'Calypsos' Derthona Timorasso is an expression of the homonymous white grape variety cultivated in the Colli Tortonesi through an approach as sustainable as possible. In the cellar, the clusters are processed through traditional white vinification with gentle pressing of the grapes and subsequent alcoholic fermentation of the must in stainless steel tanks. The wine then matures in stainless steel for several months until bottling and further rests for 12-18 months in glass before the final release onto the market.
The 'Calypsos' Derthona Timorasso has a bright straw yellow color. Intense aromas of ripe fruit and quince characterize the olfactory context along with mineral notes and hints of dried fruit recalling almond, hazelnut, flint, and graphite. The progression on the palate is rich, soft, and full-bodied, with excellent structure, pronounced fresh-sapidity, and a persistent finish that contribute to giving this Timorasso a highly gastronomic character. It is recommended to pair the Derthona 'Calypsos' with traditional Piedmontese first courses, such as agnolotti del plin, gnocchi al castelmagno, and the numerous risottos that characterize one of Italy's most refined cuisines. Also, try pairing it with freshwater fish such as trout.
