Domini Veneti's Valpolicella Classico Superiore Ripasso "Pruviniano" is a fine version of this rich and intense red from the territory. It is a wine that was born in the mid-1960s, thanks to the idea of using Amarone's marc to enrich the aromatic profile and structure of the Valpolicella red wine. Thus was born a new wine with a typically territorial face, combining the varietal characteristics of the area's indigenous grapes, Corvina, Corvinone and Rondinella, with the technique of refermentation on the marc. In just a few decades it has conquered a prominent place in the panorama of Veneto reds and today represents one of the most-loved wines of Valpolicella.

"Pruviniano" is a Valpolicella Classico Superiore Ripasso di Domini Veneti produced from the grapes of a magnificent vineyard cultivated on terraces with dry stone walls, located in the Prognol area, in the heart of the Valpolicella Classica territory. The vineyard is about 15 years old and enjoys a wonderful south-east, south-west exposure. The vines are rooted in precious soils composed of silt, clay and limestone. Harvesting is done manually towards the beginning of October. The grapes are first destemmed and then sent to be fermented at a controlled temperature, with maceration on the skins lasting about ten days. After a short rest in steel tanks, the wine is re-fermented on Amarone skins with a contact period of about fifteen days, in order to extract all the perfumes and aromas. The Ripasso matures in wooden barrels and steel vats for about 9 months and completes its long ageing process with 6 months in the bottle before being put on sale.

The red wine Valpolicella Classico Superiore Ripasso "Pruviniano" Domini Veneti is an excellent wine that allows you to appreciate the fruity pleasantness of the grapes, accompanied by a richness and aromatic depth given by the marcs of Amarone. In the glass it has a beautiful intense ruby colour with light garnet reflections. The olfactory picture seduces with rich aromas of cherry, blackberry, blackcurrant, small dark berry fruits, red plum, soft sensations of oriental spices, dried fruit, toasted hints and woody memories. The palate is ample and harmonious, with a velvety tannic texture and dense aromas. The finish is very balanced and persistent, with a delicate closure on spicy notes. It is a perfect red to enjoy with grilled red meats and roasted red meats.
