Made with spontaneous fermentation thanks to indigenous yeasts, it is a wine that remains to age 12 months in cement tanks, then rests another 12 months in the bottle. 'Kochlos' by Edoardo Dottori is a Verdicchio dei Castelli di Jesi Riserva that originates in San Paolo di Jesi, at an elevation of 215 meters above sea level, in a territory rich in fossils that testify to its past as an ancient seabed. The choice of the name is not accidental but rather reflects the deep connection between the soil and the wine; in fact, "koklos," the name on the label, is derived from the Greek word "conchiglia," referring to the minerals that enrich the soils where Verdicchio grapes grow. The producer, committed to certified organic viticulture, employs a combination of green manure and bovine manure to nourish the clayey soil rich in limestone.

The north-facing vineyard is strategically positioned, imparting a distinctive climatic exposure to Edoardo Dottori's Verdicchio dei Castelli di Jesi 'Kochlos'. The harvest is carried out manually between early and late October, ensuring the collection of grapes at the optimal moment of ripeness.
