Enò-Trio is the story of a Sicilian family and the deep bond they have established with the vineyard. This is an enological trio made up of father Nunzio Puglisi and his daughters Stefany and Désirée. He is the agronomist and winemaker of the house, with over 30 years of technical experience, and it is his job to pass on his manual skills to his daughters, to ensure that it is not lost in time. It is their responsibility to learn and interpret them in a version that is as contemporary as possible. This is a small and young winery, founded in 2013, which now has just over 2 hectares of vines, backed up by an ambitious and careful approach. It is located on the northern slope of Mount Etna, between 650 and 1100 metres above sea level, between the towns of Randazzo and Bronte, where nature is wild, the landscape gradually becomes more picturesque and the winters increasingly harsh. In recent years, this corner of Sicily has become the stage for Nunzio's experiments as he has started to cultivate Traminer Aromatico grapes from cuttings purchased in France at the beginning of the 1990s. He has achieved astonishing levels of quality, shattering the prejudices of those who believe that Traminer is a variety exclusive to northern Italy. He has also taken on the challenge of Pinot Noir, which is one of the most complex grapes to grow and ripen properly, and has come up with his own very Sicilian version. Overcoming these challenges was only possible with a human and respectful approach in the vineyard, 'because this is where the wine is made' according to Nunzio. He does not impose rules and timeframes on Nature, instead relying completely on the climatic and seasonal trends, which are different every year.
The same care and attention shown in the vineyard is transferred to the cellar, where the philosophy of "without" is adopted: without using selected yeasts and enological products, without filtering, clarification and stabilisation and without any kind of human intervention, which would distort the true soul of the fermenting juice.
The logo of the Enò-trio winery graphically describes this rich and profound history. The circle, indicating the phases of life and nature, encloses a double spurred cordon vine, which rises on the slopes of the beloved volcano. This is a genuine bond between the Puglisi family and the Etna that becomes liquid and that renews this profound promise between man and Nature sip after sip.
