The Spumante Brut Riserva is produced by Coppo, a family centennial farm in Canelli, the heart of Asti in Piedmont. In an area better known for sparkling wines and sweet wines of the grape varieties were planted, the fourth generation represented by Massimiliano and Eduardo keeps the family tradition with a look innovative. In fifty-two acres of vineyards, consisting of marly limestone, and with perfect exposure to south-southwest, are also cultivated international varieties such as Pinot Noir and Chardonnay (at an altitude of 200 meters above sea level) used for this classic method sparkling wine. The grapes used are respectively 80% and 20% and give the glass a pale golden yellow color with a thin and elegant beading. The nose is an exploit of scents ranging from apple to ripe pear, the peach almond, until the bread crust and yeast. The palate is long and winding and directly recalls the olfactory experience. Soft and attractive, impresses with persistence and widespread publicity on the final gets to give some hint of herbs. We perceive nuances of vanilla subsequent aging in barrels and forty-eight months on the lees. One end of spumante and easy to match with fish, seafood, white meats.
